Introduction

Lugaw is a beloved Filipino dish that provides comfort and satisfaction to those who enjoys it. It is essentially a type of rice porridge that is comparable to congee. In the Visayas region, it is known as pospas. The traditional method of making lugaw involves boiling glutinous rice or malagkit. However, regular white rice can also be used if it is boiled with an excess amount of water. The basic version of the dish is typically not heavily spiced and only contains salt, garlic, and ginger or sometimes sugar. A more popular garnishing nowadays include spring onion or leeks, and chili oil. When prepared correctly, it is both nourishing and delectable. Lugaw can be consumed on its own plain form, but it is commonly served with a variety of toppings. Depending on the toppings used, the dish may be referred to as arroz caldo if chicken is added or goto if beef innards are used. Popular toppings include boiled eggs, fried tofu with steamed pork, lechon kawali, or a simple combination of fried garlic, scallions, and pepper.

Bikol Ni’s History

Ms. Grace Bagnes, a self-taught chef born in Pili, Camarines Sur, is the proud owner and operator of Bikol Ni’s. The name of the establishment reflects her roots. In addition to overseeing the day-to-day operations of Bikol Ni’s, she also manages an AirBnB cabin house and staycation facility named Kamp Maysawa, located in Bgy. Cuyambay, Tanay, Rizal. Apart from this, she has a passion for outdoor photography and mountaineering. She used to play the drums for an all- female band as well.

Bikol Ni’s inspiring story started in 2011 in Morong, Rizal. It was initially a small eatery serving a variety of menu that catered to construction workers, located along the National Highway. However, with time, Bikol Ni’s gained popularity, especially it’s Lugaw recipe and it became one of the most sought-after food establishments in the town. What started as a modest venture has become an incredible success story, and it’s all thanks to the hard work and dedication of the team behind Bikol Ni’s under the leadership of Ms. Grace Bagnes.  Their commitment to serving delicious food has endeared them to loyal customers and patrons.
